Pachadi is a festive food that mixes all six flavors – sweet, sour, salty, bitter, astringent, and piquant – symbolizing the different experiences one may encounter in the new year.
In Karnataka, followers of the Souramana calendar celebrate Ugadi or Mesha Sankranti when the sun transits into the Aries Constellation around the same time as Baisakhi. Ugadi holds great importance in Hinduism, with texts and inscriptions from medieval times recording significant charitable donations to temples and community centers on this day.
